My Story

From a Grandmother's Kitchen to the Bosphorus Shore

I didn't grow up wanting to be a chef. I grew up hungry — curious, restless, and lucky enough to have a grandmother who believed that standing at the stove was the most honest way a person could spend an afternoon. Her kitchen in rural Ukraine smelled of rendered duck fat, dried dill, and something fermented in a clay pot that nobody ever formally named. I called it home.

Cooking was never taught to me in the classical sense. It was absorbed — through watching, through tasting, through being handed a wooden spoon and told, simply, to stir. My grandmother measured nothing. She seasoned by instinct, adjusted by smell, and finished every dish with a pause — a moment of listening, as if the pot itself might object. I have never lost that instinct. Every recipe I write today still ends with that pause.

My travels changed everything about how I understood food. Wandering through spice markets in Marrakech at six in the morning, eating pho from a plastic stool in Hanoi's Old Quarter, learning to hand-roll pasta from an eighty-year-old signora in Emilia-Romagna who watched my technique with barely concealed suspicion — each journey peeled back another layer of what I thought I knew about flavor. Food, I came to understand, is the most honest form of biography a culture can write about itself.

The Istanbul Chapter

Then came Istanbul. A city I visited for two weeks and stayed in for three years. My apartment there — a narrow, four-story building in Karaköy with a kitchen the size of a large wardrobe and a window that opened directly over a fishmonger's stall — became my most important classroom. Every morning began with tea and the sound of the ferry on the Bosphorus. Every evening ended with something new simmering on a two-burner stove.

Istanbul is a city that eats with purpose. The food is direct, unfussy, and built on the kind of quality that comes from proximity — to the sea, to the land, to the seasons. I learned to slow down. I learned to visit the same market stall every Thursday until the vendor started setting aside the best tomatoes for me without being asked. I learned that a great dish doesn't begin in the kitchen; it begins in the relationship between the cook and the ingredient.
